Grilled Avocado and Veggie Tacos
fire up the grill for these nutritious and simple vegetarian tacos! They’re a summer staple! Have you tried grilling an avocado before? If you haven’t, you need too. I am telling you, it’s a total game changer. Grilled avocados is one of my summer staples and so are these tacos. Grilling the avocado is so simple and brings out great flavor!

Grilled Avocado and Veggie Tacos
Healthy, fun and delicious, our Grilled Avocado and Veggie Tacos make a delicious addition to any meal. Best of all, they’re ready in 20 minutes or less!

Ingredients
- 4 Avocados, sliced in half
- 8 corn tortillas
- ½ lb of cabbage, shredded
- ¼ cup red onion, thinly sliced
- ¼ cup cilantro lightly packed
- ¼ cup jalapeno, finely diced
- 2 tbsp of lime juice
- 1 tbsp olive oil
- 2 tbsp of hot sauce
- cherry tomatoes for serving
- Salt and Pepper
Instructions
- Pre-heat your grill to low, around 350 degrees F. Once hot, carefully grease the grill by dipping a paper towel in oil and brushing it on the grates.
- Place the avocados, skin side UP, on the grill and close the lid for 5 minutes. The avocados are done once they have nice grill marks on them.
- Gently remove the flesh from the skin and slice the avocados into thick slices (about 1/3 of an inch thick each). Set aside.
- Make the slaw by mixing together the cabbage, salt, red onion, cilantro, lime juice, jalapeno, and olive oil. Set aside.
- Make the spicy mayo by combining the mayo and hot sauce until fully combined.
- Assemble the tacos by evenly dividing the avocado slices among the tortillas. Top with the slaw, mayo, and additional toppings, and enjoy
