Grilled Chicken with Spicy Mango Salsa

- 2 lbs. chicken breasts
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 2 tablespoons lime juice
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- 1 teaspoon chili powder
- 1 teaspoon salt
For the salsa:
- 2 mangos, diced
- 1 red bell pepper, diced
- 1 jalapeño, diced
- ¼ cup cilantro, chopped
- 2 tablespoons lime juice
- 2 cloves garlic, minced
- 1 teaspoon salt
Instructions
- In a small bowl, combine the olive oil, garlic, lime juice, cumin, smoked paprika, chili powder, and salt. Rub the mixture into the chicken breasts and let marinate for 15minutes.
- Meanwhile, prepare the salsa. In a medium bowl, combine themango, red bell pepper, jalapeño, cilantro, lime juice, garlic, and salt. Mixuntil combined.
- Heat a grill or grill pan over medium-high heat. Grill the chicken for 5-7 minutes per side, or until cooked through
