- 2 lbs boneless skinless chicken breasts
- ½ cup apricot preserves
- 1 tablespoon freshly grated ginger
- 2 cloves garlic, minced
- 2 tablespoons soy sauce
- ¼ teaspoon red pepper flakes
- 2 tablespoons olive oil
- Salt and pepper, to taste
Glaze:
- ¼ cup apricot preserves
- 1 tablespoon freshly grated ginger
- 2 cloves garlic, minced
Instructions
- In a large bowl, combine apricot preserves, ginger, garlic, soy sauce, and red pepper flakes. Mix until combined. Add the chicken and turn to coat. Cover and refrigerate for at least 4 hours, or overnight.
- Preheat your grill to medium-high heat.
- Remove the chicken from the marinade, season with salt and pepper, and place on the grill. Cook for 4-6 minutes per side, until the chicken is cooked through
- While the chicken is cooking, make the glaze. In a small saucepan over medium heat, combine the apricot preserves, ginger, and garlic.Simmer for 5-7 minutes, stirring occasionally, until the glaze is thick andsyrupy.
- Once the chicken is cooked through, brush with the glaze and cook for 1-2 minutes more. Serve with your favorite sides and enjoy!
