Grilled Sweet Potatoes with Avocado-Cilantro Sauce
Summer is a wonderful time to get creative in the kitchen. And one of our favorite summer meals is Grilled Sweet Potatoes with Avocado-Cilantro Sauce.

- 2 large sweet potatoes, cut into 1-inch cubes
- ¼ cup olive oil
- 1 ripe avocado, pitted and peeled
- ½ cup cilantro, chopped
- 2 cloves garlic, minced
- ¼ cup freshly squeezed lime juice
- 3 tablespoons water
- salt and pepper to taste
Instructions
- Preheat your grill to medium-high heat.
- Toss the sweet potatoes with the olive oil, salt, and pepper.
- Place the sweet potatoes on the grill and cook for about 10 minutes, or until lightly browned and fork tender.
- Meanwhile, in a blender or food processor, combine the avocado, cilantro, garlic, lime juice, and water. Blend until smooth and creamy.
- Serve the grilled sweet potatoes with the avocado-cilantro sauce. Enjoy!
