Grilled Tofu Tacos with Spicy-Honey Glaze

- 1 package extra-firm tofu, drained and cubed
- 2 tablespoons olive oil
- 2 tablespoons honey
- 2 tablespoons sriracha
- 2 tablespoons lime juice
- ½ teaspoon garlic powder
- ½ teaspoon cumin
- Toppings of choice (shredded lettuce, diced tomatoes, sliced avocado, queso fresco. etc.)
- salt and pepper to taste
Instructions
- Preheat grill to medium-high heat.
- In a small bowl, whisk together olive oil, honey, sriracha, lime juice, garlic powder, cumin, and salt.
- Place cubed tofu in a large bowl and pour the glaze over the cubes. Toss to coat.
- Place tofu cubes on the grill and cook for 4-5 minutes per side, until lightly charred and cooked through.
- Remove from the grill and set aside.
- Assemble tacos by layering each tortilla with cabbage, tomatoes, red onion, cilantro, and queso fresco.
- Top with grilled tofu and serve warm.
