Ingredients
- 3 Chicken breasts
- 2 Bell Peppers
- 1 Green Bell Pepper
- 1 White Onion
- 2 Garlic Cloves
- 1/4 Cup Cilantro
- 1/4 Cup Lime Juice
- 1/2 tsp Cumin
- 3 tbsp Water
- 3 tbsp Olive Oil
- 1 tbsp Soy Sauce
- Salt and Pepper
- 8 Corn Tortillas
Instructions
- Whisk the marinade ingredients in a small bowl
- Divide the marinade into 2 portion, half on the chicken and half on the vegetables. Refregerate both for 1 hour
- Preheat the grill to medium heat
- Cook the chicken 7-8 minutes each side until the temperature reaches 160F
- Add the vegetables to the chicken and cook until crispy
- Slice the Chicken and peppers
- Warm the trotillas on the grill. Fill them with the chicken and veggies. Serve on a serving platter.
